Claimed to be picked by specially trained monkeys from wild tea-plants that grow on high cliff faces of the Yellow Mountain. Rich in anti-oxidants with a pale golden colour and fresh sap and sweet grass flavour. 35g


This is consistently voted one of China's top ten teas. It comes from Hou Keng village in Tai Ping county (an Hui province), which is where the best Hou Kui tea is produced. In fact many other areas try to imitate this tea but they are never as good as the authentic, hand made tea from this village. Grown in the Huangshan mountains at around 700m above sea level in an area with fertile soil, humid conditions and a large temperature difference between night and day. This tea is different from other green teas in that the larger the leaf, the better the tea is considered to be. If you look closely you will see a specific criss cross pattern on the leaf which comes from them being pressed inbetween sheets of cloth.



Directions:

Infuse 1 tsp in 500ml of hot but not boiling water. The perfect temperature is around 85 degrees (listen to when you kettle starts rumbling loudly). If you brew in boiling water the infusion will start to taste bitter. Ideally use filtered water (not mineral!). If you would like to brew your tea like in China, then first rinse the leaves in hot water to wash any astringency for a smoother brew. You can infuse the same leaves up to 3 times.




Scent / Taste:

Light yet complex flavours with a grassy start and slightly nutty and nutmeg flavours to a sweet and lingering aftertaste with orchid notes. Delicious.
